Super Simple Chickpea Flour Crust

Aside from remembering to mix the batter 30 mins ahead of time, this recipe takes around 15 mins to make and bake if you include the time it takes to warm the oven! Its healthy, fiber rich, tender, and a delicious blank canvas for whatever toppings you'd like...

Socca

Serves 2 as an entrée, 4-6 as an Appetizer 


𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:

  • 1 cup chickpea flour (garbanzo flour)

  • 1 cup water

  • 2 tbsp olive oil, divided

  • 1/2 tsp sea salt

  • Other seasonings are optional, i.e. herbs, Aleppo pepper, garlic powder

𝐌𝐞𝐭𝐡𝐨𝐝:

  1. In a large bowl, whisk together chickpea flour, water, 1.5 tbsp olive oil, salt, (and other seasonings if you choose). Let it sit at room temp for 30 mins. Don't skip this step. 

  2.  After the 30 mins, place your 9" or 10" oven safe pan in the oven on a rack close to the top. THEN turn on to preheat to 450° with the pan in there.

  3. When the oven and pan are hot, CAREFULLY remove the pan (using oven mitts, of course), from the oven and pour in the 1/2 tbsp of olive oil. Swirl it around the pan then pour in the Socca batter.

  4. Turn off the oven and turn on the broiler to high.

  5. Place the hot pan under the broiler and cook 5-8 mins, or until set and slightly browned in spots.

  6. Remove from pan and smother in whichever toppings you like!


***Topping suggestions to get you started: 

• Traditional pizza sauce and cheese

• Romesco sauce with Gardein chicken and fresh mozzarella cheese

        • Pesto with sautéed asparagus, spinach, and queso fresco

        • BBQ chicken w/BBQ sauce, Monterrey jack cheese, cashews, and cilantro

    The possibilities are endless!
