Ridiculously Easy Ricotta Cheese Pie

Swirled with Jam!

This easy "pie", more like a custard slice, comes together in 5 minutes, gets poured into a pie pan, and bakes off while you get on with your life. It has no refined sugar (unless your jam has it) and is as decadent as it looks! SPOONIE TIP: This is a great "Make Ahead" dessert when you are low on spoons but want to impress!

Ricotta Cheese Pie

Serves 8-10 


𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:

  • 1 tub whole milk ricotta 14 oz

  • 2 egg whites

  • 2.5 tbsps flour, sifted well

  • 3 tbsp maple syrup 

  • Baking spray (or coconut oil)

  • 1/2-1 cup fresh or frozen berries (thawed and somewhat drained), or 1/2 cup compote or 1/2 cup jam, preferably low sugar 

  • Spray oil or baking spray


𝐌𝐞𝐭𝐡𝐨𝐝:

  1. Whisk ricotta, and next 3 ingredients (through maple syrup) together in a large bowl.

  2. Spray a 9" glass pie pan with baking spray (or wipe with coconut oil if you prefer).

  3. Drop dollops of berries, compote, or low sugar jam all over top. It doesn't have to be pretty. Using a butter knife, drag through the dollops to make a swirl. Every once in a while I like to dip deep to make sure there are bit of jam down to the bottom of the pie.

  4. Bake at 375 for 28-35 mins. Until center is just set. Let cool all the way at room temp, then refrigerate. Serve cold and store in fridge covering the pan with plastic wrap.
