Healthy (easy) Picadillo

with Ground Turkey

Don't be intimidated by the long-ish list of ingredients. You most likely have all of them already in your kitchen. 


This is a healthy and super simple recipe for Picadillo that can be served over rice, in a baguette, inside empanadas, or with a bag of cauliflower rice for a low-carb option!

Healthy (easy) Picadillo

Serves 4


𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:


• 1 tsp olive oil

• 1 lb ground turkey or 90%/10% ground sirloin

• 3/4 cup yellow onion, minced

• 2 cloves garlic, minced

• 2 tbsp tomato paste

• 1/2 tsp ground cumin

• 1/4 tsp ground cinnamon

• 1/4 tsp ground nutmeg

• 1 cup beef broth (or veg, whatever you have on hand)

• 1/3 cup (1.5oz) goldenberries, sliced in half (substitute raisins) *See note

• 1/3 cup sliced green olives with pimentos

• 3 tbsp capers

• 1/4 tsp black pepper

• 1 bay leaf

• 1 tbsp red wine vinegar


*Note on goldenberries: 

So, I despise raisins, always have. Instead I use goldenberries (also called Inca berries) that can be bought at most stores nowadays and for sure on amazon. They are tart but when cooked become lightly sweet. Delicioso!

𝐌𝐞𝐭𝐡𝐨𝐝:


It helps to have all your ingredients cut and ready to go because this comes together pretty quickly when you start cooking.


1. Over medium heat, heat the olive oil and sauté onion and garlic for a few minutes, stirring constantly because the garlic will burn easily. You just want to soften the onion a bit.


2. Add in the turkey/sirloin and break up with your spatula. Cook until it's browned.


3. Add in the tomato paste, and next 8 ingredients (through black pepper). Stir to combine. Add in the bay leaf and bring to a low simmer. 


4. Cover and reduce heat to low. Cook 20 mins stirring occasionally.


5. After those 20 mins, remove the lid and increase the heat to medium. Cook uncovered for 5 more mins, stirring often, until most of the liquid is gone and has turned into a thick coating on the meat, not quite a sauce. 


6. Turn off heat and stir in the 1 tbsp of red wine vinegar. 


Serve over rice, in a baguette…or my fave, with a bag of Cauli rice!
