"No Chicken" Salad Sandwich
Not Really a Recipe

Inexpensive food can be healthy food...really!
This is easy to make, high protein and fiber "salad" makes a great lunch or dinner for #FibroFlare days. I don't eat mayonnaise and have never understood why people love "chicken salad" sandwiches. But these...I ππ«ππ―π!
There isn't really a recipe because it can be made with whatever you have on hand. So this is more of a guide...
ππ§π π«πππ’ππ§πs:
1 can of beans (chickpea, northern beans, or favas like in this pic)
some ripe avocado
a drained jar of artichoke hearts
fresh π₯ππ¦π¨π§/π₯π’π¦π juice to taste
whatever π‘ππ«ππ¬ π¨π« π¬πππ¬π¨π§π’π§π π¬ youβd like
***Sometimes Iβll toss in minced carrots or tiny cubes of tempeh, so π ππ π°π’π₯π π°π’ππ‘ π’π!

ππππ‘π¨π:
Roughly mash the beans (you still want bite to it) then add everything else + S&P.
Mix it all up, taste, adjust, and spread it on some toast. It's nice with a small bed of spinach or sprouts, and topped with thin sliced radishes. Again, do your thang!
