"No Chicken" Salad Sandwich

Inexpensive food can be healthy food...really! 


This is easy to make, high protein and fiber "salad" makes a great lunch or dinner for #FibroFlare days. I don't eat mayonnaise and have never understood why people love "chicken salad" sandwiches. But these...I 𝐜𝐫𝐚𝐯𝐞! 


There isn't really a recipe because it can be made with whatever you have on hand. So this is more of a guide...

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭s:

  • 1 can of beans (chickpea, northern beans, or favas like in this pic)

  • some ripe avocado

  • a drained jar of artichoke hearts

  • fresh 𝐥𝐞𝐦𝐨𝐧/𝐥𝐢𝐦𝐞 juice to taste

  • whatever 𝐡𝐞𝐫𝐛𝐬 𝐨𝐫 𝐬𝐞𝐚𝐬𝐨𝐧𝐢𝐧𝐠𝐬 you’d like

***Sometimes I’ll toss in minced carrots or tiny cubes of tempeh, so 𝐠𝐞𝐭 𝐰𝐢𝐥𝐝 𝐰𝐢𝐭𝐡 𝐢𝐭!

𝐌𝐞𝐭𝐡𝐨𝐝:

  1. Roughly mash the beans (you still want bite to it) then add everything else + S&P. 

  2. Mix it all up, taste, adjust, and spread it on some toast. It's nice with a small bed of spinach or sprouts, and topped with thin sliced radishes. Again, do your thang!
