Sweet or Savory Protein Pancakes

Bacon, Orange, and more!

Have you ever seen those little tubs of "Farmer Cheese"? Lifeway makes a good one and there are a few other brands that sell this high protein cheese with a texture that falls between a ricotta and a small curd cottage cheese. But its packed with protein and soooo delicious.

SPOONIE TIP:
These are all wonderful to make ahead and freeze! Just fry them up and let them cool completely before putting them into a freezer bag and freezing. Then, when you are ready to eat them, just toss them in a pan to reheat. Easy!

Sweet or Savory Protein Pancakes


Ingredients:


SWEET OPTION 1- Orange Clove:

  • 3/4 cup all purpose flour

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 3/4 tsp cloves

  • 1- 16 oz tub farmer cheese

  • 2 large eggs

  • 2 tbsp 5% fat plain Greek yogurt

  • 1/4 cup sugar

  • 1 heaping tsp fresh orange zest

  • 2 tbsp fresh orange juice

  • 1/4 cup roasted and chopped walnuts (optional)

SWEET OPTION 2- Almond Spice:

  • 3/4 cup all purpose flour

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1/4 tsp nutmeg

  • 1/4 tsp cinnamon

  • 1- 16 oz tub farmer cheese

  • 2 large eggs

  • 2 tbsp 5% fat plain Greek yogurt

  • 1/4 cup sugar

  • 1/2 tsp almond extract

  • 1/4 cup roasted and finely chopped almonds (optional)

SAVORY OPTION- Bacon & Cheddar:

  • 1 1/4 cup flour

  • 1/2 tsp salt

  • 3/4 tsp baking soda

  • 1- 16 oz tub farmer cheese

  • 2 large eggs

  • 2 tbsp 5% fat plain Greek yogurt

  • 4 slices bacon, cooked to crisp and chopped 

  • 1/4 cup shredded sharp cheddar cheese


Method For ORANGE CLOVE & ALMOND SPICE:


  1. In a small bowl combine the flour, baking powder, salt, and spices. Whisk together and set aside.

  2. In the bowl of a food processor combine the farmer cheese, eggs, yogurt, sugar, and vanilla/almond extract or orange juice in a food processor. Process until smooth.

  3. Fold the cheese mixture into your flour mixture to combine. Fold in orange zest, or if using, nuts. (You can also substitute in some dried cranberries. If you do, run your knife through them to get them a bit smaller.)

  4. Heat about 1 tbsp coconut oil over in a non-stick pan over medium high heat. When hot enough, use a cookie scoop or 2 spoons and drop in a but of batter, depending on the size you want. I typically do a couple tbsps at a time.

  5. Allow them to brown on one side, then gently flip and brown on the other side.
